Cowboy Caesar Salad| Crisp romaine lettuce, roasted corn, black beans, cherry tomatoes,
and tortilla strips with chipotle Caesar dressing. (GF)

BBQ Pork Tenderloin Medallions| Cooked to a smokey grilled perfection, these tender and juicy BBQ pork
medallions will bring out the bold mouthwatering flavors of the West. They will be paired with a
spiced apple-jalapeno chutney that brings that perfect balance of heat and sweet. Paired with honey glazed
carrots and white cheddar mac and cheese, this dish will leave you hollerin' for more. (GF)
Chuckwagon Braised Short Ribs| These hearty, melt-in-your-mouth short ribs will have been slow braised to
tender perfection just like a cowboy would do on an open flame. Bathed in a rich and smokey whiskey
reduction, oak and char marries with the sweet and savory sauce that puts the finishing touch for a proper
Western feast. Paired with honey glazed carrots and white cheddar mac and cheese,

Rootin' Tootin' Veggie Stack| Rustle up some flavor with these seasonal grilled veggie stacks. These stacks
are served high and mighty and grilled to smoky perfection. Drizzled with a bold and flavorful chipotle
aioli and served over a bed of spiced quinoa, this dish will have your taste buds square dancing
